Superior dad heads to N.M. this weekend for regional barbecue finals
Jason Ganahl runs a freshly sharpened blade under a layer of glistening fat, smoothly separating the white glob from the dark red meat of a 7-pound pork shoulder.
The father of newborn twins studies the striations in the meat, whittles out a few more pockets of fat and points to the clean and newly-rounded hump of shoulder he just shaped. In the barbecue world, it’s known as the “money muscle” — the most delectable and supple cut.
“That’s what the judges will get,” Ganahl said, before laying down his knife on the granite countertop of his Superior home.
Ganahl was referring to the judgesat the regional finals of the 2012 Sam’s Club National BBQ Tour, taking place in Albuquerque this weekend. That’s where Ganahl, who alone makes up the Boulder County competitive barbecue team GQue, is headed with 19 pounds of beef brisket, 10 pounds of spare ribs, 30 pounds of pork shoulder and 12 chicken thighs.
