In the continuing adventure to try things wrapped in bacon my wife was wanting some fish so we thought we would wrap some scallops in bacon and give it a go – I have never had them before or have made them but I have heard of others doing it so it was not a complete unknown – I had cooked scallops once before as we usually opt for fish or shrimp – These were wonderful and I look forward to having them again real soon – I think these are a great starter as well – as long as you stick with the smaller scallops the larger scallops lend themselves to a better size for a main course.

BACON WRAPPED SCALLOPS RECIPE

WHAT YOU NEED:
Scallops – These were U-15 you can use half a bacon strip U-15s –  for U-10s you may want to use the entire strip
Package of your favorite bacon
2 Lemons
4 Garlic cloves
2 Big Stalks of Rosemary
Good Olive Oil
2 Sticks Butter

TOTAL TIME: 30 Minutes
PREP TIME: 10 Minutes
COOK TIME: 20 Minutes

-First I cook the bacon in the oven at 375 for 10 minutes to partially cook them – remove them after 10 minutes making sure they are still flexible
-Tear the bacon in half wrapping one half around a scallop – secure the bacon to the scallop with a  toothpick
-Melt 2 Sticks of Butter with 4 Minced Garlic Cloves add a little salt and pepper making Garlic Butter
-Place in a broiler pan – Drizzle Olive oil over scallops and season with salt and pepper – Place lemon slices and Rosemary under scallops as they cook
– Broil Scallops for 4-5 Minutes
– Flip scallops liberally basting both sides with the garlic butter – Cook another 4-5 minutes
– Remove and baste again with garlic butter – Reduce pan juices in a sautee pan  for a few minutes and use as a sauce – It’s Killer!
– Remove toothpicks and Enjoy – Serve on top of Rosemary bunch and Lemon Slice – drizzle reduced pan juices over scallops
