I am a fan of the carson rodizio particularly when it comes to cook wings – The spin around getting crispy over the hot coals and absorb all kinds of wonderful grill flavors. This was our second cook using the Carson Rodizio and am already looking forward to the next one.
Ingredients:
- Chicken Wings
- The Rub
- 1 cup brown sugar
- 3 cups ketchup
- 3 cups soy sauce
- 1/3 cup chicken broth
- 1 1/2 tsp minced garlic
- 2 1/2 tsp minced ginger
- Splash of pineapple juice
Directions:
Season your chicken wings with The Rub and skewer them, making sure to leave space between each wing. Place the skewer on the lower level of your Rodizio, about six inches over your coals, and let them cook until they reach an internal temperature of 145 degrees.
While the chicken is cooking, combine the brown sugar, ketchup, soy sauce, chicken broth, garlic, ginger, and pineapple juice to make a Huli Huli glaze.
Once your chicken gets to 145 degrees, use a brush to coat the wings with the glaze and let it keep cooking until it reaches an internal temperature of 165 degrees.
