Churrasco Chicken is really fun to make as you can watch spin around collecting more and more flavors as the drippings hit the coals and create flavor bombs that are picked up by the meat. In this video I do my first cook on the Carson Rodizio cooking churrasco chicken thighs with a Lemon Honey Garlic Glaze.
Ingredients:
- Thin-cut chicken thighs
- 4 oz lemon juice
- 2-3 Tbsp honey
- Splash of soy sauce
- 2 oz olive oil
- 1-2 cloves minced garlic
- The Rub
Directions:
Lightly season your chicken thighs with The Rub, then fold one or two times and skewer. Place the skewer on the lower level of your Rodizio, a few inches over your coals.
While the chicken is cooking, whisk up the lemon juice, honey, soy sauce, olive oil, garlic, and a shake or two of The Rub to make a glaze.
Once the chicken reaches an internal temperature of 145 degrees, move it to the top level of the Rodizio and brush on the glaze. While it finishes cooking, continue to baste the chicken with the glaze until it reaches a temperature of 165 degrees.
