If you’re on the paleo diet or just trying to cut sugar out of your diet, barbecue can be tricky because sugar plays such a large role in almost every barbecue recipe, but this paleo sauce is a great way to scratch that barbecue itch without adding any processed sugars.

Ingredients:

  • White onion
  • 4 cloves garlic
  • Canola oil
  • 5 medium tomatoes
  • 6 oz tomato paste
  • 1 cup beef stock
  • 2 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 2 tbsp paprika
  • 1 tsp cayenne pepper
  • 10 oz crushed pineapple
  • Juice of one lemon
  • Salt
  • Pepper

Directions:

Heat a smoker to about 350 degrees and place a Dutch oven directly over the heat.

Roughly chop the white onion, garlic, and tomatoes. Coat the bottom of the dutch oven with canola oil, then add chopped garlic and onion and season with salt and pepper. Stir well to coat the onions and put the lid on the Dutch oven and smoker. Cook for 6-7 minutes.

Once onions are softened, add chopped tomato, tomato paste, beef stock, Dijon mustard, apple cider vinegar, paprika, cayenne pepper, 1 tsp salt, and crushed pineapple to the mixture. Stir well to combine and add lemon juice. Put lids on the Dutch oven and smoker and cook for 30 minutes.

Remove the lid from the Dutch oven and replace the smoker lid then cook for another 30 minutes. Remove from heat and blend until smooth, then it’s ready to slather on a nice rack of ribs!
