Easy Prime Rib Recipe that will make you an hero for your next event. Prime rib is surprisingly easy to make and its even easier if you don’t reverse sear it. For this cook we used the Weber Slow n Sear.

Ingredients:

  • Prime Rib Roast
  • Salt
  • Your favorite dry rub

Directions:

Select a good prime rib roast with lots of marbling throughout the meat.

If your prime rib has large fat deposits around the edge, trim them down to about 1/4 of an inch thick to ensure a nice, even cook.

24 hours before cooking, rub a liberal amount of salt all over the prime rib, then wrap it tightly in plastic wrap and put it in the fridge until you’re ready to cook.

Remove the prime rib from the fridge and add a good coating of your favorite dry rub all over.

To prepare your grill, get some coals started on one side of the grill and put the lid on with the vents wide open.

Once your grill reaches about 225 degrees, close the vents half way to keep the temperature steady, add a cup of hot water to the water reservoir, add the prime rib to the opposite side from the coals, and put the lid back on.

After about two hours, check on the meat to see how the bark is forming. If it’s not completely even, rotate the meat in the grill to try to cook all parts evenly.

After another hour to hour and a half, it should be nearly finished. Check the temperature of the very center of the meat using an instant read thermometer. If you’re going to reverse sear it, it’s finished once the center reads 125 degrees, otherwise let it keep cooking to 130.

Reverse sear, if desired, and let it rest for a couple minutes, then it’s ready to slice up and enjoy!
