In this Video I will teach you how to make the best Cuban mojo Pork. We will marinate a sauce into the meat then smoke it to perfection. This meat is great alongside some beans and rice but would also be terrific on a cuban sandwich or some tacos.

Recipe in video and below is for 1 Butt – you’ll notice I am making 2 in the video – thats because I like leftovers – however everything I show you is for 1 Butt.

Sour Orange Juice – Use Seville oranges or make your sour OJ using these ingredients
1 C – Orange Juice
1/2 C – Lime
1/2 C – Lemon Juice

Then add 2 C of Sour Orange juice in a blender with
1 tsp Dried Oregano
1 tsp Cumin
1 tsp Salt
1 tsp Pepper
20 Cloves of peeled Garlic – use trick in video

Blend to liquefy
Reserve 1 C of marinade for later – Pour remainder over butt and marinade overnight

Smoke at 325 until internal temp is 160 then pour 1/2 C of reserved Marinade on Pork and foil continue to cook until internal temp is 200.
Pull Pork into desired chunks/stands

Finishing Sauce:
Sautee 1 onion
then add
1/2 C of remaining marinade
1/2 C of Juices from foil

Bring to Boil then simmer and at pork to coat

Serve with orange,lemon & lime wedges
