With Cinco De Mayo a day away I thought I would post my recipe for quacomole. Quac to me is a lot like BBQ sauce in that I ususally start with a base then add all sorts of other ingredients depending on what I feel like would taste best at the time. What I am going to give you is my recipe for my base quac, which can stand on its own great however its even better if you add some of whatever you are in the mood for. For instance if you like it hot cut up some jalapenos, if you like onion cut up some red onion and add, if you like cilantro go ahead and add. I suggest you make the base first try it then begin to add as I LOVE the base all by itself and its super easy.
Prep time: 5 min Cook time: 1 min
2 avacados – I recommend Haas – Check for ripeness by gently pressing on the avacoado if its soft and gives some then its ripe, if its firm it needs a few days to ripen
1 tomato – I recommend looking for a deep red tomato not a pinkish colored one, be sure to capture the juice from the tomoato to add as well,dont leave it on the cutting board
2 cloves of Garlic
juice of 1 lime – Roll the lime on the table with the palm of your hand a few times to loosen up the juice
Salt & Pepper
Combine the ingredients in a bowl, mix well. The key for me to good Guac is lots of salt, taste it as you make it and add more of what you like but this recipe will certainly get you going in the right direction, I put this guac on some fish tacos the other night and it was AWESOME! Its also great with chips and salsa. I like to squirt lime juice on my chips and salt and suggest trying that if you never have.
Surprise your significant other by having a Margarita and some GQue Quac with chips and salsa waiting for them when they get home tomorrow. Happy Cinco de Mayo and Enjoy!!
